Recipe: Gluten free cheese crackers

They are delicious and very easy to make, the best of all is that they do not contain gluten so they are ideal cookies for people with celiac disease, it is actually for the whole family.
The procedure to make them is very simple, however there are a couple of tricks that are fundamental and that must be respected so that they come out perfect.

Only in this way will the cookies be fluffy, with that soft texture that characterizes them. They melt in your mouth, don’t stop making them!
Recipe for making cheese crackers
Ingredients:
- 5 cups of cassava starch
- 2 tablespoons of butter
- 1 cup of ricotta cheese
- 3/4 cup of oil
- 3 cups of grated cheese
- 1 tablespoon of salt to taste
- 3 eggs
Preparation mode:
- To begin, we will put the cassava starch in a container and add salt to taste.
- Then we will add the cold milk along with the butter, which must be melted. We begin to form with our hands like a sand.
- On the other hand, in a pot we will heat the oil and then pour it into the previous mixture, it should be very hot. Don’t be afraid, throw it with confidence!
- With the help of a spoon, we will mix everything until the ingredients are completely incorporated. Cover and let the dough rest for about 15 minutes.
- After these minutes, we begin to add the rest of the ingredients. We will put the cheeses and add the eggs.
- We mix very well, all with our own hands. Remember that the dough must be homogeneous, so this step is more than essential. If we notice that the dough is very hard, we can add another egg or a little milk.
- Finally we will shape the cookies and put them on a greased and floured plate. Bake in a preheated oven at 180° for about 15 minutes.
- Remove from the oven and let cool on the plate. Then they will be, ready to devour them! A cup of coffee is the ideal companion for these cookies.
