Apple pie and pastry cream without butter and without oil

Apple Pie and Pastry Cream Recipe
Ingredients
For the base
- 3 Medium Eggs
- 150 g of Sugar
- 250 g of Flour
- 100 g of Milk
- 2 teaspoons of Baking Powder (Royal powder)
- 1 teaspoon of Ground Cinnamon
- 3 Red or Green Apples
- Lemon Juice
For the pastry cream
- 500 ml of milk (whole)
- 3 egg yolks
- 100 g of sugar
- 30 g of corn starch
- Vanilla pod, vanilla essence or lemon peel
Preparation
For the pastry cream
- We put the milk in a pot, just the vanilla pod and the lemon zest, we can also use orange zest. We leave on minimum heat, it should not boil.
- Meanwhile in a container we will beat the egg yolks, together with the sugar. We will mix.
- Gradually add the previously sifted cornstarch. The right point to stop beating will be when we see that a kind of cream has formed.
- Let’s pour this mixture into the milk and begin to beat vigorously with a wire whisk. Turn off the heat but continue beating until the desired consistency is achieved.
- Our cream will be ready, being hot we will put it in a container and we will cover it with plastic wrap. This is done so that a crust does not form on the surface.
Let cool while we prepare the base of the cake.
For the base of the apple pie
- Remove the skin from the apples and cut them into thin slices.
- We will arrange them on a plate and bathe them with a little lemon juice so that they do not darken.
- On the other hand, in a bowl we will beat the eggs with the sugar. We will beat until they get fluffy.
- We will incorporate the milk, meanwhile we do not stop beating.
- Now we will gradually incorporate the previously sifted flour, together with the baking powder. We will mix, until the mixture has some body. We clarify that in the mixture, there should be no lumps.
- Pour the preparation into a previously buttered and floured mold.
- Now it will be the turn to add the pastry cream, we will cover the entire surface.
- To finish, we will sprinkle the cinnamon powder and then we will cover the entire surface with the apples that we had already cut into slices.
- Bake in a preheated oven at 180° for about 45 minutes.
