How to Prepare Delicious Garlic and Lemon Potatoes

In addition to being a great side dish, these garlic and lemon potatoes are perfect as an appetizer, as they are incredibly tasty and can be paired with a good sauce. Now, I recommend that you follow this recipe precisely to achieve a perfect result.

For these garlic and lemon potatoes, you will need:

Ingredients:

  • 3/4 pound of small potatoes (also known as fingerling potatoes)
  • 1 tbsp. of salt
  • Zest and juice of 1 lemon
  • 4 cloves of garlic
  • 2 tbsp. of butter
  • Salt, black pepper, and paprika to taste
  • 2 tbsp. of previously chopped parsley
  • 1 tbsp. of oregano
  • Salt and water as needed

Instructions:

  1. To begin, wash the small potatoes using a sponge. It’s important to wash them thoroughly without damaging the skin, as we will be cooking them with the skin on.
  2. Cut the small potatoes in half and place them in a pot. Add plenty of water and a handful of salt to the potatoes, then bring to medium heat and let them cook for about 20 minutes. We want the potatoes to be slightly tender, not fully cooked.
  3. Once you achieve the desired texture, remove them from the water and place them on a tray.
  4. In another pot, melt the 2 tbsp. of butter over medium heat.
  5. Next, add the potato halves with the cut side down and let them brown.
  6. While they brown, add a pinch of salt, black pepper, paprika, and oregano. Mix slightly and add the previously chopped garlic, lemon zest, and lemon juice. Let it cook for a few more minutes.
  7. When you turn off the heat, add the parsley and mix well.

And there you have it, now it’s time to serve! I recommend enjoying these potatoes while they are still hot, as the flavor is more concentrated in this state. If you can’t find small potatoes, you can use regular-sized potatoes; just cut them into medium-sized pieces to achieve a similar result to fingerling potatoes.
