  • 400 ml of warm milk
  • 4 tbsp of Sugar
  • 9 gr of dry yeast (27 gr fresh yeast)
  • 2 Eggs
  • 1 tbsp of Salt
  • 1 tsp of Baking powder
  • 80 ml of Oil
  • 50 gr of Butter
  • 1 tbsp of Apple cider vinegar

To brush the dough

  • 100 gr of Butter

For brushing

  • 1 Egg yolk
  • A splash of milk

Procedure

  1. In a bowl, we are going to place the milk together with the sugar and yeast. Mix well.
  2. Add the eggs, oil, and teaspoon of salt. Mix to integrate.
  3. Gradually incorporate the flour, and add the vinegar.
  4. We are going to mix with the help of a spoon and then add the other 120 grams of flour to the dough. Dump it on the counter to start kneading.
  5. Knead, open the dough, and add the butter at room temperature. At first, it will be a bit difficult to integrate it into the dough, but don’t worry, you will achieve it!
  6. Finish integrating the butter, put the dough in a large container, and cover with film. Let it rest for about 40 minutes.
  7. After this time, we will knead again and stretch the dough into a rectangle.
  8. Brush with the 100 grams of melted butter over the entire surface.
  9. Fold the dough in half like an envelope and brush again.
  10. Fold again and brush again. Repeat the operation until all the butter is used up.
  11. Then cover the dough and let it rest for 15 minutes.
  12. After this time, stretch the dough and cut it into strips. Then we will take each of these strips, twist them, and form them like little donuts.
  13. Arrange the donuts on a baking sheet with parchment paper as a base. Brush the surface with a mixture of egg yolk and milk. If desired, we can sprinkle with some seeds, such as anise, sesame, or poppy seeds.
  14. Bake in a preheated oven at 180°C for about 30 minutes, or until the surface is golden.
  15. Then remove from the oven and if desired, sprinkle with powdered sugar.

You won’t believe the texture of these super fluffy bread donuts! They melt in your mouth, soft and full of flavor.

Why use vinegar in the dough?

Using the secret ingredient is key, as the acidity of the vinegar helps break down the gluten molecules in the dough, which in turn creates small air pockets. This aeration helps create a light and fluffy texture in the dough when baked.

Also, the acidity of the vinegar helps enhance the flavor of the dough, giving it a slightly acidic taste that can be quite pleasant. Apple cider vinegar is also a great source of beneficial bacteria, which help improve the flavor and texture of the dough as it ferments. Therefore, it is a great choice for those looking to add an extra touch to their baked goods.
